Pulses and Lentils
Pulses and lentils are a group of leguminous crops known for their high protein content, making them an essential part of plant-based diets and a great alternative to meat. Pulses include a variety of dried beans, peas, and chickpeas, such as kidney beans, black beans, and chickpeas, which are rich in protein, fiber, iron, and other essential nutrients. Pulses are versatile and can be used in a wide range of dishes, from soups and stews to salads, curries, and dips like hummus. They are also affordable and have a long shelf life, making them an excellent pantry staple.
Lentils, which are a type of pulse, come in various varieties such as green, red, brown, and black. These small, disk-shaped seeds are also packed with protein, fiber, and important micronutrients like folate, iron, and magnesium. Lentils cook quickly compared to other pulses and are a common ingredient in soups, salads, and curries, especially in cuisines from the Middle East, India, and Mediterranean regions. Both pulses and lentils are not only excellent sources of plant-based protein but also contribute to better digestive health, heart health, and blood sugar regulation, making them a valuable addition to a balanced diet
